I have just completed 47 days of 'juice fasting'. I have plummeted from 12stone 10lbs (178lbs) to 9stone 13lbs (139lbs) in just under 7 weeks !! For those of you who don't like Maths, that's 39lbs, an average of 5.5lbs per week.
I still have to pinch myself to make sure I'm not dreaming.
The fasting was hard enough, and I will go into more detail later, but now the challenge really begins - keeping it off.
Yesterday was my first day of eating. And I loved it. Juice in the morning, smoothie for lunch and the most delicious salad for dinner.
I made the smoothie with 1 orange, 1 Granny Smith apple, 1 pomegranite (a bit of a mistake but it needed using up) 1/4 pineapple, 1 banana, handful of frozen blueberries and about 7 frozen stawberries. Whizzed them all up in my new super-duper Cuisinart liquidiser and had enough for three days. The pomegranite was a mistake because the seeds made the smoothie really gritty, but I thought 'what the hell, it's all fibre' and after 2 months of no fibre at all, I figured that was a good thing.
I ate 1/3 of the smoothie and savoured every mouthful with sheer delight. I froze the other 2 portions for today and tomorrow.
I had a bit of an epiphany with the salad. I bought some asparagus, blanched it and let it cool before I made the salad. I've never put asparagus in a salad before but I always will from now on, it was bloomin' lovely ! Also into the salad went rocket, iceberg lettuce, a handful of beansprouts, cucumber, 1/2 an avocado (the delights of which have been another revelation to me recently), 1 tomato, 4 baby sweetcorn chopped, 1 stick celery chopped (which I'm not fond of but is very good for you), 1/4 green bell pepper chopped, 2 chopped salad onions, a sprinkle each of mixed seeds and pine nuts. Some fresh lemon juice as a dressing and that made enough for two days. Lovely !!
The downside is that all that delicious and healthy food made me put on a 1/2lb !! No seriously, that is to be expected, I mean, my body has had nothing in it for 7 weeks, just refilling my colon will add a few pounds, so I am not dispondent about it at all.
So on with day 2 of the 'Maintenance Plan' which is just a repeat of yesterday, and I can't wait.
